As gastronomic people have described, the Pompano is the most edible fish in the world. Their silvery and beautiful skin is typically thick, a bit tough, and savory, which can melt in your mouth right at the moment you have the first bite. Their meat is white, and firm but can be easily flaked off and has a mild flavor. This is a true Florida delicacy and one that has been enjoyed for decades.
Our Pompano variety the Golden Pompano, is sustainably farm-raised in China. The farm is USDA certified ensuring the fish are well taken care of and also guarantees that one day the US fishery for Pompano will return because right now it is nearly extinct. It is only a by-product fishery which means if it comes up in a net when the fisherman is going for something else it will be brought to market. So for now we have to rely on Sustainable Farming practices.
